In nature or in natural, unprocessed foods, protein is always accompanied by fat - just think of meat, fish, eggs or even nuts. 🥜 And that's perfect because, interestingly enough, fat makes it easier to digest protein. But why? Isn't fat actually considered difficult to digest? 🤔
Yes, that's right. Fat takes more time to digest and stays in the stomach longer than protein and even longer than carbohydrates. But it is precisely this delaying effect on gastric emptying that ensures that the proteins stay in the stomach longer and that the stomach acid can act on the proteins in the food for a longer period of time and thus digest them. This longer stay also ensures that we are full for longer. 🍽️
But that's not enough. Fat is also the essential stimulus for the release of various intestinal hormones, including the so-called CCK (cholecystekinin). 🧬 When this CCK is secreted into the blood by small intestinal cells, it causes the gallbladder to contract and release its bile into the intestines empty. This now enables the emulsification of dietary fats into small fat droplets.
But CCK can do even more. It also stimulates the pancreas to produce and release pancreatic secretions. This secretion in turn contains enzymes for fat, carbohydrate and protein digestion, so that thanks to the effect of fats on intestinal hormones, protein digestion is also possible. 🔬
So don't be surprised if a relatively low-fat protein shake made from pure protein powder, tofu or egg white powder weighs heavily on your stomach. Then maybe next time add 2 teaspoons of oil or, even better, switch to natural protein sources. 😉💡
