Crispy flaxseed crackers 😋

Ingredients:

  • 100g flax seeds 

  • 150g warm water 

  • 100g sunflower seeds 

  • 150g fresh tomatoes 

  • 30 g coarsely chopped dried tomatoes

  • 25g red onion 

  • 3 tbsp tomato paste

  • ¾ tsp salt

  • 1 tsp oregano 

  • 1 tsp thyme 

 

Preparation:

1. Grind linseed coarsely and soak in 150 g of warm water for 1 ½ hours.

2. Grind the sunflower seeds coarsely and add them to the soaked linseeds. 

3. Puree fresh tomatoes, coarsely chopped dried tomatoes, onion, tomato paste and spices in the blender. 

4. Then mix all the ingredients together thoroughly and spread small blobs of the mixture onto a baking tray lined with baking paper to form flat crackers or spread the mixture completely flat and evenly over the tray. 

5. Bake for approx. 90 minutes at 100 degrees with the oven door slightly open (weave a spoon in between). If you have a dehydrator you can also dry the crackers. 

6. After cooling, remove from the tray or break the baked mixture into pieces and store in a glass or metal container.
