Gluten-free orange vanilla cookies 🍪🍊

Ingredients (makes approx. 10 pieces):

  • 100 g whole grain rice flour

  • 150g corn flour

  • 20 g corn starch

  • ½ tsp bourbon vanilla

  • ¼ tsp baking soda (baking soda)

  • 2 tsp baking powder

  • 1 teaspoon grated orange peel

  • ½ tsp guar gum or locust bean gum

  • 120 g Alsan organic margarine or butter

  • 100 g raw cane sugar

  • 9 drops of orange oil (for food)

  • 3 tbsp rice drink

  • 1 tbsp orange juice

Preparation:

  1. Preheat the oven to 190 °C top/bottom heat.

  2. Mix all dry ingredients well in a bowl.

  3. Melt margarine or butter and sugar in the Thermomix for 5 minutes at 100 °C on level 2 (alternatively, warm it carefully in a pot and stir).

  4. Add orange oil, rice drink, orange juice and the flour mixture to the butter-sugar mixture. Mix everything well into a dough or knead with your hands.

  5. Form small balls out of the dough, flatten them into biscuits in your hand and place them on a baking tray lined with baking paper, approx. 4 cm apart.

  6. Bake the cookies for 12-14 minutes at 190°C.
