Gluten-free whole grain bread with millet & corn 🍞🌽

Ingredients: 
• 250 g whole grain rice 
• 100 g millet 
•100g corn flour
• 60 g rice or potato starch 
• ½ tsp locust bean gum  
• ½ cube of fresh yeast 
• 1 tsp salt  
• 1 tsp syrup 
• 1 tbsp flaxseed 
• 400 ml water  
 
Preparation: 
1. Grind the whole grain rice together with the millet (in the Thermomix for 1 minute at level 10) and transfer.2. Add the cornmeal, starch and locust bean gum.
3. Mix the fresh yeast with salt, syrup and 50 ml water (in the Thermomix for 1 minute at 50 degrees). 
4. Then add the flour mixture, the linseed and 350 g water and stir into a thick dough. 
5. Pour the dough into a greased loaf pan and let it rise in the oven at 50 degrees for 15 minutes. Then bake at 180 degrees for about 45 minutes until golden brown.
