Salad ingredients:
⢠250 g fresh strawberries, sliced (approx. 1½ cups)
⢠2 mini cucumbers or half a cucumber, halved lengthways, deseeded and cut into half moons (250 g)
⢠100g feta cheese, crumbled
ā¢Ā 1 small shallot, finely chopped
⢠1.5 tablespoons sliced almonds
ā¢Ā 1 handful of fresh mint (about 10 leaves)
⢠a few basil leaves (optional)

Ingredients dressing:
⢠Juice of 1 lime
ā¢Ā 1 tsp maple syrup or honey
⢠1.5 tbsp cold-pressed olive oil
ā¢Ā 1 teaspoon unseasoned rice vinegar or white balsamic vinegar
ā¢Ā Sea salt and freshly ground black pepper, to taste

Preparation:
1. Cut the strawberries into slices, halve the cucumber lengthwise, remove the seeds if necessary and cut into half moons. Finely chop the shallot.
2. Briefly dry-roast the sliced āāalmonds in the pan while stirring.
3. To make the salad, in a large bowl, gently mix the strawberries, theĀ Ā Ā cucumber slices, chopped shallot, chopped mint leaves andĀ Ā crumbled feta cheese.
4. To make the dressing, in a small bowl, whisk together the lime juice, maple syrup (or honey), olive oil, vinegar, a pinch of sea salt and freshly ground black pepper until smooth and well blended.
5. Pour the dressing over the salad ingredients and toss gently until everything is well coated.
6. Sprinkle the roasted almonds over the salad shortly before serving to give it a nice crunch. Serve immediately and garnish with basil leaves.
