Ingredients:
⢠300g amaranth
⢠1 vanilla bean (or ground bourbon vanilla)
⢠½ liter of water
⢠½ liter soy milk
⢠Pinch of salt
⢠3 eggs
⢠50 g whole cane or coconut blossom sugar
⢠Zest of a lemon, grated
⢠2 apples
⢠2 pears
⢠10 dates
⢠¼ tsp cardamom
⢠¼ tsp cinnamon
⢠3 tbsp coconut flakes

Preparation:
1. Rinse the amaranth in a sieve and let it drain.
2. Cut open the vanilla pod and scrape out the seeds (or use ground vanilla).
3. Bring water to the boil in a pot, stir in amaranth, bring to the boil again and simmer over low heat for 20 minutes, stirring occasionally. Add soy milk, salt and vanilla, bring to the boil again and simmer for another 20 minutes.
4. Put the amaranth mixture in a bowl, remove the vanilla pod and let it cool.
5. Separate 3 eggs and beat the egg whites until stiff. Mix 30 g sugar with egg yolk and lemon peel until foamy and fold into the amaranth mixture, then fold in the stiffly beaten egg white.
6. Peel, quarter, core and cut apples and pears into thin wedges. Pit the dates and cut into strips.
7. Grease a baking dish, pour in half of the amaranth mixture, then spread the apple and pear slices and date strips on top. Dust with cardamom and cinnamon and spread the remaining amaranth mixture on top.
8. Sprinkle with coconut flakes and remaining sugar, bake in a preheated oven at 180 degrees for about 45 minutes until golden.
