Ingredients:Ā
⢠1 medium cucumberĀ
⢠250 g whole milk or soy yogurtĀ
⢠1 tsp coriander seedsĀ
⢠½ tsp cumin seedsĀ
⢠1 tbsp gheeĀ
⢠¼ tsp asafoetida (available in Asian stores or organic quality online)Ā
⢠ground pepper
⢠A pinch of clove powder
⢠1 teaspoon garam masala
⢠1 tsp syrup
⢠½ tsp lemon juice
⢠½-3/4 tsp saltĀ
⢠Fresh coriander greensĀ

Preparation:
1. Peel the cucumber, grate into fine sticks and place in a bowl.Ā
2. Add whole milk or soy yogurt.Ā
3. Freshly crush the coriander and cumin seeds in a mortar.
4. Heat the ghee in a pan and briefly brown the seeds together with the asafoetida and pour them into the yoghurt while they are still hot.Ā
5. Mix everything together and season with pepper, clove powder, garam masala, syrup, lemon juice and salt.Ā
6. Finally, chop the coriander greens and sprinkle over them.
