Recipe: Coffee-peanut balls with popped amaranth

(makes approx. 25 pieces)
Ingredients:
15 soft dates (pitted)
55 g peanut butter
3-4 tsp ground coffee
(or 1 to 1 ½ tbsp ground instant coffee)
2 tsp 100% cocoa powder
½ tsp bourbon vanilla
½ tsp cinnamon
2 pinches of salt
1 pinch of nutmeg
2 tbsp orange juice
50 g popped amaranth
Preparation:
Place all ingredients except the amaranth in a powerful blender and puree until creamy. Finally, carefully stir in the popped amaranth and form small balls from the mixture with your hands.
